Chewy Oatmeal Chocolate Chip Cookies 3Love this simple, quick farmhouse favourite!

1 cup of coconut oil or butter

1 cup brown sugar

1/2 cup raw sugar

2 eggs

1 1/4 cups flour

1/2 tsp baking soda

1 tsp salt

3 cups of rolled oats

1 cup chocolate chips

Preheat oven to 350 F. Cream together coconut oil (or butter) with brown and white sugar. Beat in both eggs and vanilla. Mix together flour, baking soda and salt then stir into creamed mixture. Stir in oats and chocolate chips. Drop spoonfuls onto parchment paper lined baking sheet.

Bake for 12 minutes. Remove and transfer to cooling rack after a few minutes. Makes 3 dozen large chewy cookies.
