Deep Dish Pizza Baked in a Cast Iron Skillet
Pizza Dough ~ combine 2 cups flour with 1 tsp salt in a bowl. In another bowl, mix 1 cup of warm later with 3/4 tsp yeast and 1 tsp olive oil. Pour into flour mixture, knead for 3 minutes, let rest for 15 minutes. Knead again for 3 minutes. Divide into 2 equal pieces, shape into ball and cover with damp cloth for 3 hours on counter or overnight in refrigerator.
Place dough on floured surface and stretch to pan size. Top with tomato sauce, cheese and toppings of choice. Bake at 350 until crust is browned.
** Old Italian Tip – substitute 1 cup of the all purpose flour with 1 cup of 00 flour (an old grading system for a fine ground, low gluten flour)
